Budget-friendly recipes for people with cystic fibrosis

CF dietician Clare Woodland shares some budget-friendly recipes for people with cystic fibrosis (CF). Each recipe includes an estimated cost, based on November 2022 price points. 

  • Carrot and sultana mini pancakes

    Serving: 4

    Prep time: 5 minutes

    Cooking time: 15 minutes

    Ingredients

    • 100g wholemeal/normal self-raising flour
    • 1tsp mixed spice
    • 1 egg
    • 80g grated carrot
    • 4tbsp low fat plain yoghurt
    • 100ml semi-skimmed milk
    • 1tsp vegetable oil

    Method

    1. Put the flour, mixed spice, egg, grated carrot, yoghurt and milk into a large mixing bowl and use a hand whisk or fork to mix together.
    2. Stir in the sultanas. Heat a non-stick pan on a medium heat with oil. Cook tablespoons of batter in batches to make 8 mini pancakes. Cooking for 1-2 minutes flipping to the other side.
    3. These can be stored in a food bag in the fridge for 2-3 days.

    If you need high kcal options, full fat yoghurt and milk can be used.

  • Hidden veggie pasta sauce

    Serving: 4

    Prep time: 5 minutes

    Cooking time: 12-15 minutes

    Ingredients

    • 1tbsp vegetable oil
    • 1 red onion chopped
    • 1 carrot roughly chopped
    • 1 red pepper chopped
    • 1 celery stalk chopped
    • 1 can of chopped tomatoes
    • 1 garlic clove (puree could be used)
    • 1/2tsp oregano
    • Pinch of salt
    • 360g dried spaghetti
    • Handful fresh basil
    • Sprinkle of parmesan (dried or fresh)

    Method

    1. Heat a large pan on a medium heat and add the oil. Next add the onion, carrot, pepper and celery. Allow to cook and soften for five minutes, stirring often.
    2. Next heat a large pan of water on a medium heat, add the spaghetti. Cook for time stated on packet instructions.
    3. Meanwhile add the garlic, chopped tomatoes and oregano to the pan with the veggies. Season with a pinch of salt and combine. Leave to simmer for a few minutes.
    4. Add 180ml of pasta water from the saucepan into the vegetable mic and combine, before transferring the whole mixture into a blender. Blend until smooth.
    5. Pour your sauce back into the pan and heat through. Drain the pasta and combine with the sauce. Serve with a sprinkle of parmesan and fresh basil. 

    Depending on your budget, meat, fish or soya could be added.

  • Chicken noodle soup

    Serving: 2

    Prep time: 10 minutes

    Cooking time: 25 minutes

    Ingredients

    • 900ml chicken/vegetable stock
    • 1 chicken breast
    • 1 tsp chopped ginger
    • 1 garlic clove, finely chopped
    • 100g rice/noodles
    • 2 tbsp sweetcorn
    • Handful of mushrooms
    • 2 spring onions
    • 3 tsp soy sauce (plus little extra for serving)

    Method

    1. Pour the stock into a pan and add the chicken breast, ginger and garlic. Bring to the boil then reduce the heat, cover and simmer for 20 minutes, until chicken is tender.
    2. Put the chicken on a board and shred into small pieces, using forks. Return the chicken to the pan, with the noodles and sweetcorn, mushrooms and 1 spring onion and soy sauce. Simmer for 3-4 minutes until the noodles are cooked. 
    3. Ladle into bowls, scatter over the rest of the chopped spring onion and serve with a drizzle of soy sauce.

  • Porridge, served with topping of choice

    Serving: 1

    Prep time: 10 minutes

    Cooking time: 5 minutes

    Ingredients

    • 40-50g porridge
    • 200-250ml milk

    Topping options

    • 10g peanut butter
    • Handful of fruit
    • 1 tsp honey
    • 10g chopped nuts
    • 1 tsp Nutella

    Method

    1. Place the oats and milk in a pan over a medium heat. Cook stirring frequently for 7-10 minutes until the oats are cooked and the mixture is smooth and creamy.
    2. Spoon into a bowl and add your toppings. The toppings will help to make the porridge a little sweeter. 

    Depending on your kcal needs, use semi-skimmed or full fat milk. Two tablespoons of double cream could be added if appropriate for you. 

    Cost for serving of one: Made with 10g peanut butter: 33p, or made with 1tsp honey and chopped almonds: 42.8p (based on prices November 2022)

  • Potato and vegetable pesto bake

    Serving: 4

    Prep time: 10 minutes

    Cooking time: 25 minutes

    Ingredients

    • 800g salad potatoes, thickly sliced (tinned could be used)
    • 50g pine nuts - optional
    • 1 tsp olive oil
    • 1 courgette, sliced
    • 1 red pepper, chopped
    • 1 yellow pepper, chopped
    • 1 tablespoon pesto

    Method

    1. Preheat the oven to 200 degrees.
    2. Put the potatoes, chopped vegetables and pine nuts in a roasting tin. Drizzle with the olive oil and coat well. Bake for 20 minutes or until tender.
    3. Add the pesto and mix. Then bake for another 5 minutes. 

    Depending on your budget, meat, fish, soya could be added.
